Cinnamon Apple Pockets

What you Need:
6 Apples (I use three different kinds to get varying tastes and textures: Granny Smith, Gala, Macintosh)
(1) Package of Pillsbury (or store brand) Pie crust (2 in package)
(2) Tbs. Lemon Juice (*can substitute with orange juice or even Sunny D)
(1) cup Sugar
(2) Tsp. Cinnamon
(1/4) tsp. Nutmeg
(1) Egg Yolk
*Red Food Coloring (optional)
*Raisins (optional)

What You Do:
-Slice apples and cut the slices in thirds
-Mix with lemon juice
-Add Cinnamon, sugar and nutmeg
-Cook apples in skillet until "syrup" forms (not more than 8 minutes)
-If you are adding raisins do it in the last minutes (optional)
-Divide crusts into eight triangles
-Pour apple mixture into the center of each and squeeze closed all the seams
-Cut leaves and berries from extra dough (optional)
-Mix egg yolk and two tablespoons water (mix well) and paint all crust
-Sprinkle tops with sugar
-Bake at 450° for 10 minutes then decrease heat to 350° and bake an additional 30 minutes (or until golden brown)
-Cool for 30 minutes
