Carnival of the Recipes # 64

Type "A" Personality Cupcakes (a.k.a. Taste of the Beach Cupcakes)


...I'm not even going to lie and say these are easy. Due to my obviously unhealthy need to always be the "best mom" I decided to devise a "beach theme" cup cake for Mason's Pre-School class. It wasn't good enough for just the icing to be two-toned with fish and sand --I needed the water to go all the way through, so i two-toned the actual cupcake also. They were very good and the kids loved them (and anyone with kids knows it's virtually impossible to please 26 four and five year olds).



What You Need:

(2) Boxes of Betty Crocker Super Moist Butter Recipe White
(2) Sticks of Butter
(6) Egg WHITES
(2) Betty Crocker Whipped cream Frosting
(1) Box Cinnamon Graham Crackers
(1) Lg. bag of mini Swedish fish
Blue food coloring
Cupcake liners

What You Do:
-Make cake mix according to recipe on box (MAKE SURE TO USE REAL BUTTER & NOT MARGERINE) --make each box in a separate bowl.
-Add Blue food coloring to one bowl of cake batter until it's the desired color blue (let batter sit a few minutes to stiffen).
-Mix food coloring into one of the jars if icing (make sure to stir both well so it's a "whipped" consistency.
-Line cupcake tray with liners and fill with half blue and half white icing and cook according to box directions.
-Crush Graham Crackers to fine consistency.
-When cupcakes have COMPLETELY cooled, ice the white side and sprinkle with graham cracker crumbs.
-Then ice the blue side and garnish with two mini fish.

They're a pain, but the praise is nice and the shame of the other mothers is divine;)
