Moroccan Chicken-Apple Beanpot
What You Need:
1 lb. Chicken (diced)
1 lg. Vidalia Onion / or sweet onion (sliced)
2 Medium Apples (preferably Gala) (sliced)
1 (16oz) can of Chickpeas (drained, but SAVE LIQUID)
1/2 tsp. Turmeric
1/2 tsp. ground Allspice
1/2 tsp. Cinnamon
Salt & Pepper (to taste)
Oil (of your preference)
2 cups Rice
What You Do:
-(In a skillet) Heat oil and cook onion and diced chicken breast until onion slices are browned.
-Add apple slices, turmeric, allspice, salt, pepper and cinnamon and cook (while stirring) until the apples are soft.
-Make the rice.
-Add the chickpeas, and some of the liquid that you drained (enough to wet the contents of the skillet)
-Cook for approx 1-3 minutes after you add the chickpeas and serve over hot rice.
