Carnival of Recipes #52

Hot Taco Salad


What You Need:

1.5 lbs. Ground Beef (can also be made with Re-fried beans for Vegetarian version)
3-4 ripe tomatoes (diced)
3/4 head lettuce (chopped)
16 oz. Sour Cream
1 packet Taco Seasoning (powdered)
1 jar Salsa (optional)
16 oz. Cheddar Cheese (or 3 cheese 'taco' mixes)
2 bags of Tortilla Chips (Tostitos 'Scoops' work great)
13 X 9 Lasagna baking dish

What You Do:
-Pre-heat oven to 350°
-Brown ground beef (make sure to get it very fine)
-Drain beef well
-Mix 1/2 of the powdered Taco seasoning into a coffee mug and fill mug about half way with water (mix well)
-Add season mixture to beef and cook until completely mixed
-Pour entire container of Sour cream into the baking dish
-Repeat steps for Seasoning mix with the remainder of the packet (but use a little less water)
-Pour into sour cream, mix well (should be pink) and spread evenly on the bottom of the pan
-Evenly spread the ground beef over the sour cream mixture
-If you want Salsa -pour it over the beef (I keep it in the side)
-spread (finely) chopped lettuce over beef
-Diced tomatoes over the lettuce
-Spread cheese generously over the entire mixture
-Cover with aluminum foil and bake for 30 minutes
-Remove aluminum and bake for 15 minutes (or until cheese is fully melted)
-Serve hot with tortilla chips
