Carnival of the Recipes # 49

Pistachio Ambrosia

This is a great summer dessert and is one of three things that I am always asked to bring/make for parties. The other is my Hot Taco Salad (which I may do next week) and my Pasta Salad (which I will never tell)...

What You Need:

(2) 16 oz. tubs of Cool Whip
(1) 16 oz. bag of MINI Marshmallows
(2) 3.4 oz. boxes of Pistachio pudding
(2) 20 oz. cans crushed Pineapple
(2) 16 oz. jars of Maraschino cherries

What You Do:
In a big bowl combine Cool Whip, marshmallows and pudding mix & mix well.
Drain one can of pineapple and DO NOT drain the second.
Pour both cans into mixture and stir.
Cut up both jars of cherries and add to mix.
Refrigerate for one hour before serving.
