Apple Streusel Muffins
(I like to post quick and easy recipes and these are a bit more involved than what I normally choose to share, BUT I'm not gonna lie...they are awesome! Also known as Jewish Apple Muffins for those of us in the Tri-State area) Sorry Trek! ;)
What You Need:
1 Cup Brown Sugar
4 large apples* (skinned and sliced)
2 1/4 cups flour (will be divided)
1 tablespoon cinnamon
1 1/2 sticks of butter (will be divided)
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup sugar
3 large eggs
1 teaspoon vanilla
1/2 cup orange juice (will be divided)
1/2 cup confectioner’s sugar
What You Do:
Preheat oven to 350°.
You prepare the Streusel first as follows:
Combine (1) cup brown sugar, apples, (1/4) cup flour, cinnamon and (3) tablespoons of melted butter. Mix well and let sit.
Next you make the cake mixture:
In a separate bowl combine (2) cups flour, (1)tsp. baking powder and (1) tsp. baking soda. Mix well.
In yet another bowl combine (1) stick of butter and (1/2) cup sugar. Use an electric mixer until light and fluffy. Add (3) eggs one at a time -mixing after each one. Add (1) tbs. of vanilla.
Set mixer setting to low and alternatively mix in flour mixture and (1/3) cup orange juice into egg mixture.
If you are not using baking cups, make sure to grease the pan*!
Spoon cake mixture in the bottoms of the baking cups (about 1/4 way full). There will be four layers. Cake mix, streusel, cake mix, streusel.
Bake for 10 minutes -then remove muffins and top them with the remaining streusel.
Bake for an additional 30 minutes (or until toothpick comes out clean).
Combine (1/2) cup confectioner’s sugar and 2 1/2 tablespoons of orange juice and stir well. This is the glaze. Drizzle over muffins once they are completely cooled.
*Don't use Red Delicious apples -they don't hold up for baking.
*This can also be done as a cake in a tube pan.
