Carnival of the Recipes #47

Sweet Cinnamon Coffee Rolls
(With or Without Raisins)

What You Need:
2 cups flour
1 tablespoon baking powder
1 teaspoon salt
1/4 teaspoon baking soda
1/4 cup vegetable oil
3/4 cup buttermilk
1 stick of butter (softened)
3/4 cup sugar
1 tablespoon Cinnamon
1/4 teaspoon Cardamom (optional*)
2 cups of raisins (optional*)
1 cup milk (optional*)

What You Do:
-Pre-heat oven to 400°
-Sit out butter to soften.
-Combine flour, baking powder, salt and baking soda and mix well.
-Stir in vegetable oil.
-Add buttermilk and stir just until blended.
-Knead dough on (lightly) floured surface until smooth.
-Roll dough into a 15 X 8 rectangle
-Spread the stick of butter over the dough (very generously)
-Combine sugar, cinnamon and cardamom* and mix well
-Spread sugar mixture evenly over buttered dough
-Boil water to pour over raisins and drain well*
-Spread raisins over sugar mixture*
-Roll the dough beginning with the long side of the rectangle
-Pinch to seal
-Slice roll in approximately 1 1/2" thick slices
-Grease pan well (if you made the roll well you can use a cookie sheet, but if your circles are falling apart use a round baking dish to keep rolls together)
-Bake @ 400° until lightly browned (about 15 -20 minutes)
-Remove from oven and pour milk over rolls*
-Serve warm

(*Cardamom is a spice from India -commonly used in the yogurt drink Lassi- it smells a bit like Vicks Vapor rub, but adds a nice taste and goes great with coffee -- the rolls are still good without it...)
